Charleston chef cooks on NBC’s Today show

Chef Kevin Mitchell talks about the art, science and stories behind food in the South during a segment on the Today show. (Photo/NBC)Chef Kevin Mitchell conducted a live cooking demonstration on the Today show recently, but the culinary instructor also gave viewers insight into Trident Technical College’s cooking school.

In the segment, which included film of Mitchell working with students at the Culinary Institute of Charleston, the chef talks philosophically about the art and science of cooking.

“In order to be a really great chef, you have to understand where the food comes from,” Mitchell said.

In addition to filming Michell with his students, NBC producers also followed him to Joseph Fields Farm on Johns Island. The Today show said producers were interested to see how Mitchell connected the food and the history of South Carolina.

Mitchell has worked at several restaurants across the region and joined the Culinary Institute of Charleston in 2008. He has two degrees from the Culinary Institute of America and a master’s degree in Southern studies from the University of Mississippi.

He also has served as a South Carolina Chef Ambassador and recently released a cookbook with co-author David Shields called Taste the State: South Carolina’s Signature Foods, Recipes, and Their Stories.
